Instructions
Preheat oven to 425 degrees Fahrenheit
Start by peeling your sweet potatoes and slice into 1/4 inch slices. Make sure that your sweet potatoes are similar in diameter to ensure even cooking time.
Toss the sliced sweet potatoes, coconut oil and cinnamon in a mixing bowl. Mix until each slice is evenly coated
Lay sliced sweet potatoes flat on a baking sheet lined with parchment paper. If not using anything between the sweet potatoes and the pan or using aluminum foil, spray with coconut oil prior to placing sweet potatoes on the tray.
Roast sweet potatoes at 425 for 15 minutes
After 25 minutes, remove from oven, flip sweet potatoes over and add mini marshmallows on the tops of each slice. Optional, add more cinnamon on top or chopped pecans too!
Roast for 5 more minutes and if you want an additional brown on the top, broil for 1 minute (be very careful, as marshmallows can burn easily!)
