Fluffy Banana Pancakes

These healthy fluffy banana pancakes are made with no flour, only 5 simple ingredients and are super easy to make. Refined sugar, dairy and gluten free!

Equipment

  • Skillet

Ingredients
  

  • 2 eggs
  • 1 banana
  • 1/2 cup oat flour see notes
  • 1/4 cup almond flour
  • 1/2 tsp baking soda

Optional Toppings

  • fresh berries
  • yogurt
  • shaved chocolate
  • honey
  • nuts (walnuts, pecans, slivered almonds, etc.)

Instructions
 

  • Warm a skillet on medium heat (be sure to not be above this) with coconut oil spray
  • If mixing with a blender, add all ingredients and blend until smooth or the banana is a little chunky (up to your preference).
  • If mixing by hand, start by mashing the banana and whisk in the egg. Then add the oat flour, almond flour and baking soda.
  • Once the skillet is hot, add 2-4 tbsp of the batter to the skillet (depending on the size of pancake you want). Wait for the outsides of the pancakes to form and bubbles to rise in the middle to flip. This should be around 3-4 minutes.
  • Cook for 3-4 minutes on the flipped side and repeat for each pancake. May take you more than 2 rounds, depending on the size of your skillet.
  • Serve with toppings and enjoy!

Notes

  1. I used premade oat flour but you can make your own by blending oats in a high speed blender. 1 cup of whole oats tends to yield about 2/3 cup oat flour. 
  2. I have not tested this recipe with a flax egg
  3. Make sure you are using a ripe banana
  4. Oat flour may be substituted for regular or gluten free all purpose flour
