Healthy General Tso's Chicken

This healthier take on the classic Chinese takeout dish is easy, gluten free, dairy free and can be made paleo or vegan

- 1/2 pound of cubed chicken or 1 block of tofu cubed
- 3 tbsp coconut aminos
- 3 tbsp water
- 2 tsp rice vinegar
- 1 tbsp ketchup
- 1 tbsp cornstarch or tapioca starch
- 1/2 tbsp coconut sugar
- 1 inch grated ginger
- 1/2 tsp onion powder
- 2 tsp sesame seeds
- Optional: red pepper flakes
First cook the chicken/tofu on medium heat in a skillet. Season with salt and pepper in olive oil
In a dish, whisk together the coconut aminos, water, rice vinegar, ketchup, coconut sugar, onion powder, sesame seeds and red pepper flakes
Remove chicken from skillet and set aside.
Add sauce into pan and bring to a slight boil while continually stirring. Once there is a slight boil, quickly change to low heat.
Mix together the cornstarch with a splash of water to make a slurry. Then add to the sauce in the pan
Add chicken or tofu into the sauce and thoroughly cover the chicken
Pair with white rice and steamed broccoli or your favorite sides
- To make this paleo, use a ketchup, such as this, that is complaint and tapioca starch instead of cornstarch
