This delicious and easy healthy stovetop turkey chili is perfect for a weeknight dinner. It is made with budget-friendly ingredients, minimal steps and all gluten free!
Start by cutting and washing all your vegetables (onion, carrots and bell pepper)
In a large pot, add in the olive and chopped onions and cook on medium heat for 3-4 minutes or until the onions are fragrant and transparent
Next, add in the carrots and bell peppers and cook for 3-4 more minutes
Then add in ground turkey and use your spatula to break it down into crumbled pieces. Cook until lightly browned.
While the turkey is cooking, rinse and drain your black beans and corn.
Once the turkey is done, add in the black beans, corn, diced tomatoes, tomato paste, chicken broth, and spices. Increase the heat to high and bring to a boil.
Once the chili is at a slight boil, reduce down to a simmer and cover the pot. Let cook for 15 minutes.
Serve with toppings and base of choice!
Crockpot Method
Add olive oil, chopped onions and ground turkey in a saute pan and cook on medium until meat is lightly browned
Rinse and drain your black beans and corn
Add all ingredients into the crockpot and cover. Cook on low for 8 hours or high for 5 hours

If you can find fire roasted diced tomatoes, they are incredible in this recipe!
