Equipment

  • Food Processor

Ingredients
  

  • 1 cup cashews
  • 1 cup pitted dates soaked
  • 1 tbsp chia seeds
  • 1/3 cup vanilla protein powder
  • 1/3 cup shredded coconut

Instructions
 

  • Soak pitted dates in boiling water for 15 minutes
  • Once dates are softened, add to a food processor with cashews and protein powder and blend until chunky
  • Add chia seeds and 1/4 cup of shredded coconut. Pulse until combined
  • Form into 1 inch balls and roll into the remaining shredded coconut
  • Store in fridge!

Notes

  1. Use vegan protein if making vegan. I use Nuzest Clean Lean Vanilla Protein
