Easy Cinnamon Apple Blender Pancakes

Healthy easy cinnamon apple blender pancakes are perfect for the best breakfast. They are gluten free, dairy free and have no added sugar.

- 1 tbsp coconut oil
- 1 cup rolled oats
- 2/3 cup applesauce
- 2 eggs
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp baking powder
- 2 tbsp almond milk substitute any milk
Sauteed Cinnamon Apples
- 1/2 apple cored and chopped
- 1/4 tsp cinnamon
- 1 tsp coconut oil
Optional Toppings
- yogurt
- peanut butter
- maple syrup
Place all pancake ingredients into a blender and blend until smooth. Optional to leave slightly chunky for texture preference.
Heat a pancake skillet on medium heat with 1 tbsp of coconut oil
Once the skillet is hot, add 1/4 cup of pancake batter for 1 pancake. Repeat process until skillet is full
Once you see the edges start to form and slightly bubble on the top, flip the pancakes over. This should be about 3-4 minutes
Repeat this process until all the batter is used. This made two servings and about 6 small pancakes in total.
