Easy Cinnamon Apple Blender Pancakes

Healthy easy cinnamon apple blender pancakes are perfect for the best breakfast. They are gluten free, dairy free and have no added sugar.

Equipment

  • Blender
  • Skillet

Ingredients
  

  • 1 tbsp coconut oil
  • 1 cup rolled oats
  • 2/3 cup applesauce
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp baking powder
  • 2 tbsp almond milk substitute any milk

Sauteed Cinnamon Apples

  • 1/2 apple cored and chopped
  • 1/4 tsp cinnamon
  • 1 tsp coconut oil

Optional Toppings

  • yogurt
  • peanut butter
  • maple syrup

Instructions
 

  • Place all pancake ingredients into a blender and blend until smooth. Optional to leave slightly chunky for texture preference.
  • Heat a pancake skillet on medium heat with 1 tbsp of coconut oil
  • Once the skillet is hot, add 1/4 cup of pancake batter for 1 pancake. Repeat process until skillet is full
  • Once you see the edges start to form and slightly bubble on the top, flip the pancakes over. This should be about 3-4 minutes
  • Repeat this process until all the batter is used. This made two servings and about 6 small pancakes in total.

Sauteed Cinnamon Apples

  • In a pan, heat 1 tsp of coconut oil on low/medium heat. Add chopped apples and cinnamon to the pan and stir occasionally until soft.
