Vegan Lentil Bolognese

This lentil bolognese is made with steamed lentils, carrots, tomato sauce and a few other hearty ingredients. It is quick and easy, made vegan and gluten free.

Ingredients
  

  • 1 tbsp olive oil
  • 255 g package steamed lentils 1 package
  • 1 white onion
  • 2 cups carrots diced
  • 4 cups spinach
  • 15 oz tomato sauce about 1 jar
  • 3 cups mushrooms diced
  • 1 tsp dried basil
  • 1 tsp dried oregano

Instructions
 

  • Start by dicing your onions, carrots and mushrooms
  • Add olive oil, onion and carrots into a pot and cook on medium heat for about 4-5 minutes.
  • Add in mushrooms and cook for 2-3 more minutes.
  • Then add the steamed lentils, tomato sauce, spinach, dried basil and oregano to the pot and bring to a simmer.
  • Cover and cook on low/medium for about 15 minutes.
  • Serve with pasta of choice or spaghetti squash
