The best spinach banana waffles that require only 4 ingredients, can be made into pancakes and are gluten free, dairy free and only sweetened with banana!
Add the oats, egg, banana, spinach and baking powder into a blender (and cinnamon if adding)
Spray the waffle maker with cooking spray and add waffle mix. Cook according to the waffle maker cooking time. If you are using a mini waffle maker, repeat for 3 mini waffles. If using a pancake skillet, cook on medium heat and wait until bubbles form on the top to flip (about 3 minutes per side).
Serve with greek yogurt for an extra boost of protein, fresh berries and a drizzle of honey, maple syrup or running nut butter!
