Lemon Poppy Seed Minute Mug Cake

The easiest single serve lemon poppy seed minute mug cake that is dairy free, low in sugar and made in the microwave. The best refreshing, healthy dessert!

Equipment

  • Mug or Ramekin

Ingredients
  

  • 1 egg
  • 3 tbsp all purpose flour sub gluten free if needed
  • 1 tbsp vanilla protein powder
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp milk of choice
  • 1/2 tsp poppy seeds
  • 1/2 tsp baking powder

Instructions
 

  • In a small bowl, mix the flour, vanilla protein powder, poppy seeds and baking powder
  • Add in the egg, honey, lemon juice and milk of choice. Mix until well combined, but be sure to not overmix
  • Add the lemon poppy seed cake batter into a greased mug or ramekin that is microwave safe
  • Microwave the mug cake for 1 minute. The cake will puff up dramatically but will reduce in height once it is out of the microwave
  • Top with yogurt, whipped cream, icing or frosting!

Notes

  1. You can replace the all purpose flour with gluten free all purpose flour
  2. For the protein powder, you can replace with 1 more tablespoon of flour + a splash of vanilla extract
  3. I have not tested this recipe with any egg substitute
