While the oven is preheating, shred about half a zucchini and squeeze in a paper towel or cheese cloth to remove excess liquid. Measure the 1/4 cup shredded zucchini from this.
In a bowl, add the applesauce, yogurt, milk, maple syrup and vanilla extract together.
Mix together oat flour, cinnamon and baking powder together in a bowl. Then mix in the wet ingredients until well combined.
Fold in the oats, shredded zucchini and dairy free chocolate chips.
Lightly spray the muffin tray with coconut oil or use cupcake liners. Then fill each muffin with about 1/4 cup of batter.
Bake at 350 for about 18-20 minutes, or until toothpick comes out clean when tested.
Notes
can use all purpose or gluten free all purpose flour in place of the oat flour
you can make oat flour by blending oats in a high speed blender until you get a fine flour consistency
any plain or vanilla yogurt will work, including dairy free
if you want a sweeter oatmeal cup, add 1-4 tablespoons of maple syrup or honey
any chocolate chips will work, including dairy or dairy free
