Easy Turkey Bolognese with Spaghetti Squash

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground turkey sub any ground meat
  • 1/2 white onion finely diced
  • 1 cup carrots finely diced
  • 4 cups spinach
  • 1 15 oz jar tomato basil sauce
  • 1 cup mushrooms finely diced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 spaghetti squash

Instructions
 

Spaghetti Squash

  • Preheat oven to 425°F
  • Carefully slice the spaghetti squash long ways down the middle
  • Place open side down on a parchment paper lined baking tray (or use a spray olive oil to prevent sticking if you are using tin foil or nothing)
  • Bake at 425°F for 45 minutes

Turkey Bolognese

  • In a saute pan, add olive oil, onions, ground turkey and carrots until the turkey is a light brown color and onions are translucent. Cook on medium heat
  • Then add mushrooms and cook for 2 more minutes.
  • Add tomato basil sauce, basil and oregano. Bring to a slight boil, then reduce down to low/medium heat. Add the spinach, stir and cover for 10 minutes.
