Add chicken breast, jar of salsa and olive oil to a 5-6 quart slow cooker
Cook on low for 6-7 hours, or high for 3-4 hours
Once the chicken is done, remove the chicken and place in a bowl. Use the Hamilton Beach Professional Hand Mixer with Easy Beaters to shred the chicken, then place back in the slow cooker to mix with the remaining salsa
Gather your salad ingredients in a bowl with the salsa chicken. Mix together the avocado and lime as a creamy dressing and enjoy!
