Slow Cooker Salsa Chicken Tacos

These flavorful and juicy crockpot salsa chicken tacos are healthy, easy and delicious. Add this into your weekly dinner rotation!

Equipment

  • 1 Slow cooker
  • 1 Hand mixer

Ingredients
  

Salsa Chicken

  • 2 lbs chicken breast
  • 1 15oz jar of salsa
  • 1 tbsp olive oil

Taco Salad Ingredients

  • lettuce
  • carbohydrate of choice
  • diced bell pepper
  • cherry tomatoes
  • avocado
  • juice of lime
  • hemp seeds optional

Instructions
 

  • Add chicken breast, jar of salsa and olive oil to a 5-6 quart slow cooker
  • Cook on low for 6-7 hours, or high for 3-4 hours
  • Once the chicken is done, remove the chicken and place in a bowl. Use the Hamilton Beach Professional Hand Mixer with Easy Beaters to shred the chicken, then place back in the slow cooker to mix with the remaining salsa
  • Gather your salad ingredients in a bowl with the salsa chicken. Mix together the avocado and lime as a creamy dressing and enjoy!
