Spicy and Hot Harissa Beef Burgers

These spicy and hot harissa beef burgers are gluten free, dairy free and paleo. Perfect for any summer grilling day!

Ingredients
  

Beef Patties

  • 1.5 pounds of ground beef
  • 2 tbsp harissa paste
  • 1 tsp smoked paprika
  • salt and pepper to taste

Roasted Potato Wedges

  • 1 pound of yellow potatoes cut into wedges
  • 1 tbsp olive oil
  • salt and pepper to taste

Massaged Hummus Kale

  • 4 cups washed and trimmed kale
  • 1/4 cup original hummus
  • 3 tbsp almond milk
  • 1/2 tbsp lemon juice

Instructions
 

For the burgers:

  • mix together beef, harissa paste, smoked paprika, salt and pepper.
  • Evenly separate into 6 parts and shape into patties. Make a slight crater in the center with your thumb of back of a spoon. Grill for 6-7 minutes per side

For the potatoes

  • Preheat oven to 400 degrees Fahrenheit
  • In a bowl, mix together potato wedges, olive oil, salt and pepper.
  • Evenly distribute onto a sheet pan and bake for 35-40 minutes, flipping halfway

For the kale:

  • Whisk together hummus, almond milk, and lemon juice. Pour mixture over kale and massage thoroughly with your hands for 1 minute or more. Add salt and pepper to taste
