Cheddar Chive Corn Muffins

Easy, healthy muffins to take on the go or add as a dinner side. Can be made dairy free

- 1 1/2 cups all purpose flour regular or gluten free work
- 1/2 cup corn meal
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 3/4 cup milk
- 1/2 cup applesauce sub melted oil, butter or yogurt
- 1/2 cup shredded sharp cheddar sub dairy free if applicable
- 1-2 tbsp chopped chives
Preheat the oven to 350 degrees F
Whisk together eggs, milk and applesauce in a bowl
In a separate bowl, mix together flour, corn meal, baking powder and salt
Add dry ingredients to the wet, making sure to mix until well incorporated but without over mixing
Fold in chives and cheddar
Fill muffin tins about 3/4 of the way up. Should yield about 10 muffins
Bake at 350 for 17-18 minutes
