Cheddar Chive Corn Muffins

Ingredients
  

  • 1 1/2 cups all purpose flour regular or gluten free work
  • 1/2 cup corn meal
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup applesauce sub melted oil, butter or yogurt
  • 1/2 cup shredded sharp cheddar sub dairy free if applicable
  • 1-2 tbsp chopped chives

Instructions
 

  • Preheat the oven to 350 degrees F
  • Whisk together eggs, milk and applesauce in a bowl
  • In a separate bowl, mix together flour, corn meal, baking powder and salt
  • Add dry ingredients to the wet, making sure to mix until well incorporated but without over mixing
  • Fold in chives and cheddar
  • Fill muffin tins about 3/4 of the way up. Should yield about 10 muffins
  • Bake at 350 for 17-18 minutes
