Vegan Lentil Bolognese

This lentil bolognese is made with steamed lentils, carrots, tomato sauce and a few other hearty ingredients. It is quick and easy, made vegan and gluten free.

1 tbsp olive oil 255 g package steamed lentils 1 package 1 white onion 2 cups carrots diced 4 cups spinach 15 oz tomato sauce about 1 jar 3 cups mushrooms diced 1 tsp dried basil 1 tsp dried oregano
Start by dicing your onions, carrots and mushrooms
Add olive oil, onion and carrots into a pot and cook on medium heat for about 4-5 minutes.
Add in mushrooms and cook for 2-3 more minutes.
Then add the steamed lentils, tomato sauce, spinach, dried basil and oregano to the pot and bring to a simmer.
Cover and cook on low/medium for about 15 minutes.
Serve with pasta of choice or spaghetti squash
