Peanut Butter Pretzel Energy Bites

These peanut butter pretzel energy bites are the perfect sweet and salty combination using only 5 ingredients. They are vegan, gluten free and packed with healthy fats, carbs and protein.

Equipment

  • Tray

Ingredients
  

  • 3/4 cup rolled oats
  • 3 tbsp vanilla or chocolate protein powder
  • 1/3 cup natural peanut butter
  • 3 tbsp honey sub maple syrup
  • 1/4 cup crushed gluten free pretzels

Instructions
 

  • Whisk together peanut butter, maple syrup and protein powder until smooth
  • Add gluten free pretzels to a bag and crush them up into tiny pieces
  • Add the crushed gluten free pretzels and oats into the peanut butter mixture. Keep folding until well combined
  • Roll into 1 inch sized bites and store in a sealed container. Place in the fridge for 15 minutes to harden up and enjoy!

Notes

  1. You can substitute the protein powder for oat flour
  2. If you are using plain protein powder, I would recommend adding a splash of vanilla extract
  3. If you are using unsalted pretzels, I would recommend adding a pinch of salt (you can also use regular pretzels but gluten free has a nice crunch)
  4. You can substitute the peanut butter with the nut or seed butter of your choosing
