Chocolate Chip Zucchini Baked Oatmeal Cups

Incredibly delicious and easy baked oatmeal cups with a sneaky vegetable hidden and sweetened with only applesauce and dairy free chocolate chips!

Ingredients
  

  • 1/2 cup plant based milk
  • 1/4 cup plain or vanilla yogurt
  • 1/3 cup applesauce
  • 1 tsp vanilla
  • 1 cup oat flour see notes
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup shredded zucchini
  • 1/4 cup dairy free chocolate chips

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit
  • While the oven is preheating, shred about half a zucchini and squeeze in a paper towel or cheese cloth to remove excess liquid. Measure the 1/4 cup shredded zucchini from this.
  • In a bowl, add the applesauce, yogurt, milk, maple syrup and vanilla extract together.
  • Mix together oat flour, cinnamon and baking powder together in a bowl. Then mix in the wet ingredients until well combined.
  • Fold in the oats, shredded zucchini and dairy free chocolate chips.
  • Lightly spray the muffin tray with coconut oil or use cupcake liners. Then fill each muffin with about 1/4 cup of batter.
  • Bake at 350 for about 18-20 minutes, or until toothpick comes out clean when tested.

Notes

  1. can use all purpose or gluten free all purpose flour in place of the oat flour
  2. you can make oat flour by blending oats in a high speed blender until you get a fine flour consistency 
  3. any plain or vanilla yogurt will work, including dairy free
  4. if you want a sweeter oatmeal cup, add 1-4 tablespoons of maple syrup or honey 
  5. any chocolate chips will work, including dairy or dairy free
