This single serve carrot cake baked oatmeal is perfect for a healthy warm breakfast. It is dairy free, gluten free, refined sugar free and vegan!

Ingredients

oats

banana
1/4
cup
shredded carrots
1/2
cup
milk of choice
1/2
tsp
baking soda
1
scoop
collagen
optional
1/2
tbsp
shredded coconut
1/8
tsp
cinnamon
1/8
tsp
nutmeg
Optional Toppings
chopped walnuts, raisins
Greek yogurt, milk, honey, maple syrup or coconut yogurt
Instructions
Blend the oats, shredded carrots, banana, milk, baking soda, collagen, coconut, cinnamon and nutmeg together in a high speed blender until smooth.
Pour carrot cake oatmeal mixture into a greased ramekin/oven safe dish
Top with raisins and chopped walnuts (optional)
Bake at 375 for 25 minutes or until golden brown on top
Optional but recommended add either a splash of milk, some peanut butter, dollop of yogurt or drizzle of honey
Notes
Can make this baked oatmeal sweeter with adding 1-3 teaspoons of maple syrup
Can use whole or baby carrots
Can add a scoop of protein powder but add 1-2 tablespoons of additional liquid
Any kind of oats work or replace with 1/3 cup oat flour
