I will be the first person to admit that I am not the biggest fan of cheddar… or cheese if we are being completely honest.
I know what you are thinking… is this girl insane?
Trust me, I know. We are working on it. But for now, these cheddar chive corn muffins were dearly enjoyed by my father. One of my favorite *new* traditions has been coming up with a different muffins to meal prep for his breakfasts at work. I am a firm believer that practicality is one of the keys to having a healthy, balanced lifestyle. Which leads me to muffins, one of the easiest breakfasts or snacks to bring on the go. They are perfect whether you are an avid meeting bouncer or you spend hours commuting per day.
So… what’s in these cheddar chive corn muffins?
- All-purpose flour (GF works; haven’t tested any others, but if you do please let me know!)
- Corn meal
- Eggs (sub flax eggs)
- Applesauce
- Milk (any unflavored milk works)
- Cheddar (sub dairy free)
- Chives
- Baking powder and salt!
I love using unsweetened applesauce as a replacement to oil and butter in recipes. It does not always work, but in this case it is perfect as it adds a subtle sweet note to the savory flavors. If you do not want to use applesauce, feel free to use melted butter, oil or plain yogurt.

Cheddar Chive Corn Muffins
Equipment
- Muffin Tin
Ingredients
- 1 1/2 cups all purpose flour regular or gluten free work
- 1/2 cup corn meal
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 3/4 cup milk
- 1/2 cup applesauce sub melted oil, butter or yogurt
- 1/2 cup shredded sharp cheddar sub dairy free if applicable
- 1-2 tbsp chopped chives
Instructions
- Preheat the oven to 350 degrees F
- Whisk together eggs, milk and applesauce in a bowl
- In a separate bowl, mix together flour, corn meal, baking powder and salt
- Add dry ingredients to the wet, making sure to mix until well incorporated but without over mixing
- Fold in chives and cheddar
- Fill muffin tins about 3/4 of the way up. Should yield about 10 muffins
- Bake at 350 for 17-18 minutes
