PSL SMOOTHIE ✨ is back babyyy. This recipe blew up on my account last year so it was only fitting to recreate it again. Plus it’s still hot summer temps so this clearly is the perfect breakfast if you ask me 😌
The KEY to this smoothie is freezing your coffee and pumpkin puree!! I use an ice cube tray and the night before I make pumpkin and coffee cubes. You could easily use regular iced coffee the morning of as part of your liquid part, but I love my smoothies thick and the more frozen ingredients, the better for muahh 👌🏼
dEATS 👉 Pumpkin Spice Latte Smoothie
3 pumpkin puree cubes (about 1 tbsp each)
4 coffee cubes (can use 1-2 shots espresso or decaf!!)
1/3 frozen banana chunks
1 cup @califiafarms almond milk
1/2 tsp @traderjoes pumpkin pie spice
2 @jooliesdates pitted dates (optional if u want less sweet or add honey/maple syrup)
1 serving @nuzest_usa vanilla protein powder
+ water to consistency!
this sheet pan meal is the epitome of fall 🍂 between the fresh brussels sprouts to the roasted pecans to the savory yet sweet spices… ooof it’s a good one.

dEATS 👉 1 pack of @traderjoes Cauliflower gnocchi and brussels sprouts with avocado oil, balsamic, cinnamon, garlic powder, onion powder, ground mustard (optional) s&p roasted at 425 for 15 min. Add 1 @tradeejoes chicken sausage pack (sliced) and pecans and roast for 15 more minutes, then toss in dried cranberries to finish the dish!

dEATS 👉 Apple Pie Pancakes (in a blender combine 1/2 cup oats + 1/3 cup apple sauce + 1 egg + vanilla + 1/2 tsp cinnamon + dash of nutmeg + 1/2 tsp baking powder + 1 tbsp milk. i like to leave the oats a little chunky for texture) // topped with @fage greek yogurt, @lastofoods pumpkin spice almond butter & sautéed cinnamon apples

dEATS 👉 Cinnamon roll baked oats
Into a blender:
1/3 cup rolled oats
25g @nuzest_usa vanilla protein powder
1/2 cup almond milk
1/2 tsp cinnamon
1/2 tsp baking powder
1/2 banana (sub 3 tbsp yogurt or applesauce)
**add maple syrup if u like sweeter!
Pour into oven safe dish. Bake at 350 for 15 minutes
Glaze: Greek yogurt + splash of maple syrup + splash of almond milk. Use a ziploc bag and cut the corner to pipe it. Or go the easier way and pour over it 😉
Needless to say my air fryer is one of my favorite kitchen appliances and if you haven’t tried air frying a panini, get it on it ASAP ROCKY 👊
dEATS 👉 Pesto Panini
Take 2 slices of sourdough and spray with olive oil on one side of each.
Place on slice with the sprayed side down, add a layer of vegan kale pesto, sun dried tomatoes, arugula & shredded mozzarella. add the second piece of sourdough on top (with the sprayed side on the outside)
Air fry at 380 for 4 minutes, flip and 4 more minutes.

No I’m not biased because my birthday ✨happens✨ to fall in there BUT I feel like it’s always the perfect weather, so many fun things to do that are festive and there’s a sense calmness. I love the sunny summer weather but the heat waves this year did me in and I need those sunny & 70 days, ya feel??
dEATS 👉 Pumpkin Waffles
2 tbsp pumpkin puree
1/3 cup oat flour
1/3 cup vanilla almond milk
1/2 tsp pumpkin spice
1/4 tsp baking powder
This batter is on the thicker side so if you want to make pancakes, just add a little more almond milk! You can also add protein powder to this but again, add more almond milk or water!
Paired with Greek yogurt, pumpkin spice almond butter, pumpkin seeds and maple syrup

dEATS 👉 Chocolatley egg white oats (1/2 cup oats + 1 cup water/milk + splash of vanilla extract. Once almost done, whisk in 1/3 cup egg whites fast + 1 tbsp cocoa/cacao powder + 1/2 mashed banana) // topped with blueberries, raspberries, pumpkin seeds, peanut butter and Greek yogurt (trust me, it adds such a good creamy element)
STICKY GINGER GARLIC TOFU ✨ if you aren’t a fan of tofu, you need to try air frying it (or just always replace with meat or fish lol)
This is an oldie but a goodie because I was planning on taking a picture of last night’s dinner but the storm took out any chance of natural light possible 🥲 but truly, this is the perfect meal to cozy up to. And now it’s polar opposite and allllll sunny because it’s always sunny in Philadelphia right? 🦋🌞🌈
dEATS 👉 Sticky Ginger Garlic Tofu
Wrap a package of extra-form tofu in paper towels for 15 minutes. Slice into 1/2 inch cubes. Spray an air fryer with neutral cooking spray and air fry tofu at 380F for 15 minutes, shaking half way **can also sauté**
In a bowl mix: 1 inch grated ginger + 1 tsp minced garlic + 1 tbsp sesame seed oil + 1/2 cup coconut aminos + 2 tbsp rice vinegar + 2 tsp maple syrup + 1 tsp arrowroot starch or cornstarch
Add the sauce to a saucepan on low heat and allow to thicken for a few minutes. Add the tofu in and mix. Saute on low for 2-3 minutes. Add sesame seeds to top. Serve with sautéed snap peas and brown rice!

dEATS 👉 Game Day Popcorn Trail Mix
3 cups @angiesboomchickapop Sea Salt Popcorn
1 cup mini pretzels
1/3 cup dried cranberries
1/3 cup mini chocolate chips
1/3 cup roasted almonds
1/3 cup roasted cashews
1 tbsp melted coconut oil
1 tsp ground cinnamon
Add all ingredients into a plastic storage bag. Shake WELL until the cinnamon looks fully incorporated amongst all ingredients. Pour into a bowl and serve!
I promise there’s yogurt underneath but I mean, #gobigorgohome when it comes to toppings amirite 😉
