Anyone else grow up making microwave minute mug cakes? My mom used to make a large pre-made mix and separate them into individual servings so that we could have a single serve cake at any point. While I am on a mission to make my own large batch cake mix, this lemon poppy seed minute mug cake will do. Even though I loved that cake mix as a kid, I knew that I wanted to make something similar but with a healthier spin. This mug cake is lower in sugar and uses no refined sugar. The ingredients are super simple and I am sure that you have all the ingredients at home!
SO… what will you need to make the lemon poppy seed minute mug cake?
- All purpose flour
- Egg
- Lemon
- Honey
- Vanilla protein powder
- Baking powder
- Poppy seeds
- Milk of choice
How to Make A Microwave Mug Cake:
This recipe could not be easier! When it comes to a quick dessert, I am all about the minimal amount of ingredients. You will just need a few basic ingredients plus the lemon and poppy seeds!
- Start by mixing the dry ingredients (all purpose flour, vanilla protein powder, baking powder and poppy seeds)
- Add in the wet ingredients (egg, honey, lemon juice and milk of choice)
- Add to a greased mug or ramekin
- Pop into the microwave for one minute and you are done! The cake will puff up a lot in the microwave, but do not worry because it will go down!
Protein Mug Cake:
I personally love to add a little bit of protein to all my baked goods. For this recipe, I added 1 tablespoon of my favorite vanilla protein powder for an extra boost. I love Nuzest, which is made of pea powder and it is completely vegan. The vanilla flavor especially adds to the flavor of the mug cake so without it, the mug cake would need an additional drop of vanilla extract.
What Can I Top the Mug Cake With?
- Yogurt: I love a dollop of thick and creamy Greek yogurt or coconut yogurt
- Whipped cream: Absolutely great light and airy topping that melts perfectly into the cake!
- Icing: Easily mix powdered sugar and a dash of milk together for a quick icing
- Frosting: Simple mills is my absolute favorite!
Can I make any substitutions or add more ingredients?
- All purpose flour: You can use gluten free all purpose flour but I do not have any other recommendations. Oat flour could potentially work.
- Vanilla protein powder: You can replace with 1 tablespoon more of flour plus a splash of vanilla extract. If you want to increase the protein, you can add 1 more tablespoon of protein powder and decrease the flour by 1 tablespoon
- Milk of choice: I used almond milk, but any milk will work as long as it is plain or vanilla
- Poppy seeds: You can leave these out completely if you choice to do so
- Egg: I have not tested this recipe with any egg replacement. I would not recommend egg whites, as you need the fat content from the yolk

Lemon Poppy Seed Minute Mug Cake
Equipment
- Mug or Ramekin
Ingredients
- 1 egg
- 3 tbsp all purpose flour sub gluten free if needed
- 1 tbsp vanilla protein powder
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tbsp milk of choice
- 1/2 tsp poppy seeds
- 1/2 tsp baking powder
Instructions
- In a small bowl, mix the flour, vanilla protein powder, poppy seeds and baking powder
- Add in the egg, honey, lemon juice and milk of choice. Mix until well combined, but be sure to not overmix
- Add the lemon poppy seed cake batter into a greased mug or ramekin that is microwave safe
- Microwave the mug cake for 1 minute. The cake will puff up dramatically but will reduce in height once it is out of the microwave
- Top with yogurt, whipped cream, icing or frosting!
Notes
- You can replace the all purpose flour with gluten free all purpose flour
- For the protein powder, you can replace with 1 more tablespoon of flour + a splash of vanilla extract
- I have not tested this recipe with any egg substitute
