Chocolate chip zucchini baked oatmeal cups are here just in time for the spring season! Right now there are lots of fruits and vegetables coming in to season again and I am here for it. These cups are perfect for a breakfast, snack or dessert. They are gluten free, dairy free, vegan and are only sweetened from applesauce and chocolate chips!

These chocolate chip zucchini muffins are heavenly and you would never believe that they are only sweetened with applesauce and the chocolate chips. I know that baked oatmeal is trending on TikTok right now, but have you tried making them into cups and keeping some of the oats whole? While I love the creativity of blending the oats into a flour, whole oats add extra fiber for good gut health and to help us stay full. These baked oat cups are perfect for that on the go breakfast because they pack in fruit from the applesauce, vegetables from the zucchini, protein, fat, carbohydrates and fiber! Plus, a little touch of sweet.
SO… what will you need to make the chocolate chip zucchini baked oatmeal cups?
- Oats & Oat Flour
- Applesauce
- Shredded Zucchini
- Dairy Free Yogurt
- Milk of Choice
- Baking Powder
- Vanilla
- Dark Chocolate Chips
- Cinnamon
Which kind of chocolate should you use?
There are so many different types of chocolate you could use here but these are my absolute favorite and I would highly recommend!
How do I add protein to oatmeal?
There are a few ways you can add an extra dose of protein to the baked oatmeal cups. One way is to use Greek yogurt instead of regular or dairy free yogurt. Another option is to replace 1-2 tablespoons of the oat flour with vanilla protein powder. If you are not a fan of protein powder, you can add collagen peptides without having to adjust the recipe since it easily dissolves. And lastly, you can add an egg or egg whites to this recipe. I would limit to 1 egg or 3 egg whites.
How long can I store these for?
These last up to 1 week stored in a well sealed container in the refrigerator. You can also freeze up to 6 months.
Can I make any substitutions or add more ingredients?
- Oats: I have made this recipe with steel cut, old fashioned, quick and irish – all have worked! However, if you use another kind, I do not know if the timing or texture will be off.
- Applesauce: this makes the oatmeal extra creamy and provides a that extremely moist texture. Feel free to replace with about 1 mashed banana, 1/3 cup pumpkin puree or coconut oil.
- Chocolate Chips: you can use any kind of chocolate, dairy free or not. You can also melt the chocolate into the batter for a full chocolate baked oatmeal cup or eliminate the chocolate overall.
- Yogurt: I used dairy free to keep this recipe vegan but any plain or vanilla yogurt will work.
- Milk: I used almond milk to keep this recipe vegan but any kind of milk will work.
- Sweetener: If you want to make these sweeter, add 1-4 tablespoons of maple syrup, agave or honey.

Chocolate Chip Zucchini Baked Oatmeal Cups
Equipment
- Muffin Tin
Ingredients
- 1/2 cup plant based milk
- 1/4 cup plain or vanilla yogurt
- 1/3 cup applesauce
- 1 tsp vanilla
- 1 cup oat flour see notes
- 1 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 cup shredded zucchini
- 1/4 cup dairy free chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit
- While the oven is preheating, shred about half a zucchini and squeeze in a paper towel or cheese cloth to remove excess liquid. Measure the 1/4 cup shredded zucchini from this.
- In a bowl, add the applesauce, yogurt, milk, maple syrup and vanilla extract together.
- Mix together oat flour, cinnamon and baking powder together in a bowl. Then mix in the wet ingredients until well combined.
- Fold in the oats, shredded zucchini and dairy free chocolate chips.
- Lightly spray the muffin tray with coconut oil or use cupcake liners. Then fill each muffin with about 1/4 cup of batter.
- Bake at 350 for about 18-20 minutes, or until toothpick comes out clean when tested.
Notes
- can use all purpose or gluten free all purpose flour in place of the oat flour
- you can make oat flour by blending oats in a high speed blender until you get a fine flour consistency
- any plain or vanilla yogurt will work, including dairy free
- if you want a sweeter oatmeal cup, add 1-4 tablespoons of maple syrup or honey
- any chocolate chips will work, including dairy or dairy free
