Taking your favorite lemon bars into a cup for the best lemon yogurt bar cups! These no hassle dessert cups are perfect to share with a crowd. They are made with a coconut flour base, creamy Greek yogurt filling and all gluten free ingredients.

My love for lemon is extreme and if you cannot tell by the plethora of lemon recipes on here… it is time to start going through my recipe index. Lemon is in incredible ingredient, whether it is for baking, cooking, drinks or even making your place smell amazing. I will never understand how people do not like lemon in baked goods but even the slightest “lemon baked good hater” will be sure to love these lemon yogurt bar cups. They are super creamy with a crisp crust made from just 3 ingredients. And as the temperatures start to rise, having a chilled dessert is simply a must have.

Why I used Carrington Farms Ingredients:

My kitchen has been filled with Carrington Farms coconut oil and various other ingredients for a long time now. They have a wide range of products from coconut oil to ghee, coconut flour to chia seeds and more. Many of the shelf stable healthy baking must haves are on their product line and I can almost always find Carrington Farms ingredients at my local grocery stores. All products are non-GMO, Kosher and USDA Organic.

For this specific recipe, I used Carrington Farms Liquid Coconut Oil and Coconut Flour. I have personally been using the liquid coconut oil for a long time because it is seriously SO easy to use! Since I do not have to melt it in the microwave or stove, I can just measure it and pour. I also love to use it for essential oil serums as well, so it has many purposes in my apartment.

Additionally, even though coconut flour itself is a very unique texture and cannot be easily replaced 1:1, the coconut oil can be substituted with their ghee as well. Since I used the coconut oil that is liquid at room temperature, I would recommend melting the ghee prior to using in the shortbread mixture!

Can I make lemon yogurt bars instead of cups?

Of course you can! This recipe is good for either cups or bars. The cups are a great idea if you are starting to bring back COVID-safe gatherings for Mother’s Day or Memorial Day and want to make sure you bring something individually wrapped. Instead of pulling out the kitchen knife and individually wrapping, the cups are super easy to already have that done! However, if you want to make the bars or squares instead, I recommend using an 8-inch or a 9-inch loaf pan, as this is a small batch. I would add about 5 minutes to the filling bake time, as the middle will need longer to bake completely.

If you want to double this recipe for a crowd, you can easily do that! If you are doubling the recipe and want to make the bars, I would use an 8×8 baking pan. And on the opposite end, you can half this recipe to make 4 cups.

How do I store the lemon cups?

I recommend storing these in the fridge for up to 1 week in a sealed container. If you have them for longer than that, you can freeze them in a freezer safe container as well. The frozen lemon cups are actually SO delicious and make for a crazy good frozen dessert especially with the summer heat coming up.

Can I make any substitutions or add more ingredients?

  • Coconut flour: Unfortunately, coconut flour is a very unique flour and cannot be replaced one to one in baking. If you want to try almond flour or all purpose, you will most likely need more
  • Coconut oil: You can substitute with olive oil, melted butter or ghee.
  • Maple syrup: Any liquid sugar will work but granular will not since we need the moisture
  • Greek yogurt: You can replace with a thick dairy free yogurt that mimics Greek yogurt. The consistency will be off if you use a runny yogurt. I would also recommend sticking to plain, vanilla or lemon Greek (or thick) yogurt
  • Eggs: I have not tested this recipe with any replacements, but you may find success in an egg substitute.
  • Like more lemon? Feel free to use 2 small lemons instead of just 1 large lemon

Your favorite lemon yogurt bars turned into cup forms for the perfect little bites! These are gluten free and lower in sugar, made with a creamy lemon filling and crispy coconut based crust.

Equipment

  • Muffin Tin

Ingredients
  

Crust

  • 7 tbsp coconut flour
  • 4 tbsp maple syrup
  • 4 tbsp coconut oil

Filling:

  • 1 large lemon juice and zest
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/4 cup Greek yogurt
  • 1/2 tsp coconut flour

Instructions
 

  • Preheat the oven to 350°F
  • In a mixing bowl combine the coconut flour, coconut oil and maple syrup to form a shortbread dough.
  • Take 1 heaping tablespoon of shortbread dough and press it down into each muffin tin that is either lined or greased. I highly recommend the silicone baking cups or greasing with coconut oil spray
  • Bake the shortbread crust cups for 12 minutes at 350°F or until they have a lightly golden rim
  • While the crusts are baking, add the juice and zest of 1 lemon, eggs, Greek yogurt, vanilla, maple syrup and remaining 1/2 tsp of coconut flour into a mixing bowl to make the filling. Use a whisk to combine until completely mixed.
  • Once the crusts are done, add the lemon filling over each crust cup. I used 1 1/2 to 2 tablespoons of lemon filling for each cup and filled 8 cupcake tins.
  • Bake the lemon yogurt bar cups for 20 minutes at 350°F and then allow them to completely cool before eating. Store in the refrigerator or freezer.

thank you december for being the reset my mind & body needed 😌☃️🍳🎄

since starting this account, this is the longest I’ve ever not posted. this year was busy in the best way but post marathon, I felt just about zero inspiration for posting and instead of pushing to “just post”, I let myself reset and remember that it truly doesn’t matter in the grand scheme of things 

december was a month of being a lot less on socials, a lot less on my phone in general & a lot of time taking a step back to reflect on the year and be present in life

Trying to recap this entire race weekend with @everywomansmarathon & #TeamMilk thanks to @lehighvalleydairy was harder than I thought. Trying to summarize how inspiring, motivating and encouraging this event was is hard to put into words. 

From the moment I landed to the moment I left, I had a smile on my face. Women are truly incredible. Doing the hard thing full of feminine power. Finding the mental strength when the miles got tough (and I think we can all agree they absolutely did). Yet finishing with a smile because we did it. 

Time to recover & obviously what better recovery than making chocolate milk with @lehighvalleydairy milk after a flight because you know my muscles are trying to recharge 😜 Huge thank you for being the best partner!! 🫶

If you ever thought about signing up for this marathon, I could give you a million reasons why it’s a huge YES and I’d run it back tomorrow if I could!!

My motto going into this was “why not” - why not me? why not go for it? why not enjoy the hard things? why not fight when you don’t want to anymore? 

The course was SO stunning, yet more challenging than I expected so a little extra grit and perseverance was needed (a little beef with miles 16.5-20 and humidity on race day AZ 😂). I felt like my fitness was there, nutrition was on point & my strength got me up and down all the hills. Coming out of this with a huge smile, taking a moment to relish in the accomplishment, relax for a little & ready to find my next marathon 🏃‍♀️

We are officially less than 1 month out from the @everywomansmarathon which feels absolutely crazy!! 

At this point in training, my mileage is going up on peak week and then tapering down so while the mileage is important, recovery is extremely important! 

1. Nutrition: keeping up with energy needs + more is so important so that you can replenish the body that is working so hard. One of my favorite post workout meals is a smoothie featuring @lehighvalleydairy milk because it is easy on the stomach but I get extra electrolytes and protein thanks to the milk! 

2. Hydration: I’m reallyyyyy good at hydration in the first half of the day and then somewhere in the middle of the day… it isn’t always the best so my biggest goal is to keep sipping throughout the afternoon, as well as adding electrolytes because I am a super salty sweater. And bonus - did you know a glass of milk is hydrating with electrolytes?? 

3. Easy movement throughout the day: the last thing you want is to get stiff not from the running itself, but sitting in an awkward position for hours on end. It’s nice to relax but simply getting up to bring water helps a ton! 

4. Nervous system resetting: finding ways to help your nervous system settle down, like a walk with a friend, sitting in the sun or in nature, reading a book, meditation, sauna, etc. Between running a lot, lifting, working, social events, etc. - it is super important to find ways in the day to get your body to rest, that doesn’t include sleep! 

5. Sleep: I’m an 8 hour girl through and through so my goal is always a minimum of 8 and if I can, I try to get 8.5 hours!

It’s soup girl szn 🍜☔️ I don’t make the rules!!! 

for the longest time I thought I really wasn’t a soup gal when everyone else was BUT that’s because I find most soups don’t fill me up 😅 so we’re on a mission this cozy season to create ones that could act like a whole meal :)

This was is an absolute fav every cozy season 🧸

dEATS 👉 Lasagna Soup

drizzle olive oil in a pot on medium heat and add 1lb of lean beef (or preference). then add in 1 diced small onion and 6 minced cloves of garlic. let cook until beef is browned. 

add 2 tbsp tomato paste and 2 tbsp Italian seasoning, then stir.

bring temp up to high and add 24oz can of crushed tomatoes, 1 container of broth and 1 spoonful of Calabrian chili sauce (optional spice). bring to a boil, reduce to a simmer and add in 6-8oz of lasagna noodles broken into pieces (break smaller than you think lol)

cook until pasta is al dente. add 3-4 cups of spinach, handful of chopped fresh basil and 6oz of shredded mozz. stir and done in a few minutes once spinach is wilted! 

serve & option to add a dollop or two of ricotta! Enjoy :)

PUMPKIN SPICE OVERNIGHT OATS 🎃🍂 because it’s officially fall and we get to celebrate all the festive flavors of the season

Overnight oats are a go-to meal prep for me but having this flavor switch up gave me a sense of excitement for breakfast 🤩 Marathon training for @everywomansmarathon has given me some extraaaaaa early mornings to get those miles in, so having this prepped for me to eat before work is so important!

These oats are super creamy, flavorful & packed with protein + electrolytes thanks to @lehighvalleydairy milk. So go grab these ingredients, prep your breakfasts ahead of time & your future workweek self will thank you 😜

dEATS 👉 Pumpkin Spice Overnight Oats
1/2 cup rolled oats
1 scoop vanilla protein powder
1/2 cup @lehighvalleydairy milk
Spoonful chia seeds
1 spoonful of pumpkin puree (not pie filling)
3-4 tbsp Greek yogurt 
1/2 tsp pumpkin spice seasoning (just do cinnamon if you don’t have it :)

Option to add pumpkin seeds, berries or sliced figs on the top! Or festive whipped cream & extra pumpkin spice like I did 🤭

Makes 1 serving - adjust to your needs and multiple for as many servings as you need!
