This recipe has been a lifesaver on multiple occasions because all you have to do is make sure you have defrosted chicken breasts and you can throw everything in the slow cooker while you rush out the door. It’s flavorful, juicy, and it is ready to go once you get home. You can customize salad to your own preference. The Key to Easy Shredding

Slow Cooker Salsa Chicken Tacos
Equipment
- 1 Slow cooker
- 1 Hand mixer
Ingredients
Salsa Chicken
- 2 lbs chicken breast
- 1 15oz jar of salsa
- 1 tbsp olive oil
Taco Salad Ingredients
- lettuce
- carbohydrate of choice
- diced bell pepper
- cherry tomatoes
- avocado
- juice of lime
- hemp seeds optional
Instructions
- Add chicken breast, jar of salsa and olive oil to a 5-6 quart slow cooker
- Cook on low for 6-7 hours, or high for 3-4 hours
- Once the chicken is done, remove the chicken and place in a bowl. Use the Hamilton Beach Professional Hand Mixer with Easy Beaters to shred the chicken, then place back in the slow cooker to mix with the remaining salsa
- Gather your salad ingredients in a bowl with the salsa chicken. Mix together the avocado and lime as a creamy dressing and enjoy!
