Nothing screams fall more than these easy cinnamon apple blender pancakes. These delicious pancakes are an easy breakfast whether it is for chilly fall weekend morning or packed on the go for the work or school day. They are packed with flavor and fluff but also gluten free, dairy free and added sugar free!

Fall is all about the apples and the pumpkin recipes, right? In my opinion, if we had to decide between the two, I would mostly likely take apples. Apples are so versatile, whether you want to eat a fresh crisp and light apple fresh off the tree or cook it down into a delicious baked good.
In this recipe, I used homemade applesauce but you can use store bought as well. Want to make your own applesauce? Follow these easy steps below:
- Peel, core and chop 4 apples into tiny pieces (this way it will cook down faster)
- Add to a pan on low-medium heat on a stovetop. Add 1 tbsp lemon juice (to preserve). Reduce down for about 15-20 minutes
- Use a fork or spoon to mash the apples into a chunky sauce.
For this specific recipe, you can easily leave this chunky. If you want to use this applesauce for eating purposes, use a blender to create that smooth consistency and add cinnamon as an optional flavor boost!
SO… what will you need for the easy cinnamon apple blender pancakes?
- Applesauce: again, either homemade or store bought work here!
- Oats: I used rolled oats in this recipe but any kind of oat will work
- Eggs: I have not tasted with a flax or chia egg but have made this recipe successfully with 2 egg whites to replace the 1 egg
- Collagen: completely optional but I love the added protein without changing the texture of the pancakes. I used Vital Proteins
- Cinnamon, nutmeg, baking powder and vanilla!
- TOPPINGS: a very important step. I personally love a dollop of yogurt and drizzle of peanut butter, as both add an extra creamy element. But most importantly, sauteed cinnamon apples. They are incredible and will have your kitchen smelling like a Yankee candle.

Easy Cinnamon Apple Blender Pancakes
Equipment
- Blender
- Skillet
Ingredients
- 1 tbsp coconut oil
- 1 cup rolled oats
- 2/3 cup applesauce
- 2 eggs
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp baking powder
- 2 tbsp almond milk substitute any milk
Sauteed Cinnamon Apples
- 1/2 apple cored and chopped
- 1/4 tsp cinnamon
- 1 tsp coconut oil
Optional Toppings
- yogurt
- peanut butter
- maple syrup
Instructions
- Place all pancake ingredients into a blender and blend until smooth. Optional to leave slightly chunky for texture preference.
- Heat a pancake skillet on medium heat with 1 tbsp of coconut oil
- Once the skillet is hot, add 1/4 cup of pancake batter for 1 pancake. Repeat process until skillet is full
- Once you see the edges start to form and slightly bubble on the top, flip the pancakes over. This should be about 3-4 minutes
- Repeat this process until all the batter is used. This made two servings and about 6 small pancakes in total.
Sauteed Cinnamon Apples
- In a pan, heat 1 tsp of coconut oil on low/medium heat. Add chopped apples and cinnamon to the pan and stir occasionally until soft.
