Happy St. Patrick’s Day! In honor of the holiday that I celebrate even though I am not Irish, I am posting my favorite 4 ingredient waffles. The best spinach banana waffles you will ever find and they could not be simpler. All you need is spinach, oats, banana and egg – plus some baking powder and cinnamon but those do not count.
I know what you are probably thinking… spinach in pancakes no way! But trust me, you seriously won’t even test them. You only need a little bit of spinach to add to the color and to get an extra dose of vegetables into your sweet breakfast. I always say that sometimes it is more about adding to your dish, rather than removing when it comes to health. So instead of ditching pancakes all together, try adding spinach for an extra serving of vegetables!
SO… what will you need to make the best spinach banana waffles?
- Egg
- Banana
- Oats
- Spinach
- Baking Powder
- Cinnamon
Can I make waffles into pancakes?
Absolutely! You will use the same exact batter but add the batter to a greased pancake skillet. You can add 2 tablespoons worth for mini pancakes or about 1/4 cup for regular sized pancakes. The key to making pancakes is low to medium heat, wait for the bubbles to appear on the top of the pancake before flipping and lots of patience! For both the waffles and the pancakes, you can freeze them for up to 6 months as well!
You can also use a regular sized waffle maker or this mini waffle maker – which I have been obsessed with for years now!
Can I make any substitutions or add more ingredients?
- Banana: You could use 3/4 cup applesauce
- Oat Flour: You could substitute 1:1 with regular or gluten free flour, as well as protein powder
- Spinach: You can simply leave out the spinach if it is not your jam!
- Egg: I have not tested this recipe with a flax or chia egg but I would imagine that you would be able to. You can substitute the 2 eggs with 4 egg whites (whisked well)
- Protein Powder: You can definitely add an extra boost of protein to this dish by adding a scoop of protein powder or collagen peptides. If adding protein powder, I would recommend adding a splash of liquid as well.

Best Spinach Banana Waffles
Equipment
- Waffle Maker or Pancake Skillet
Ingredients
- 1/2 banana
- 1/2 cup oats
- 1 egg
- 1/4 cup spinach loosely packed
- 1/4 tsp baking powder
- dash cinnamon optional
Instructions
- Add the oats, egg, banana, spinach and baking powder into a blender (and cinnamon if adding)
- Spray the waffle maker with cooking spray and add waffle mix. Cook according to the waffle maker cooking time. If you are using a mini waffle maker, repeat for 3 mini waffles. If using a pancake skillet, cook on medium heat and wait until bubbles form on the top to flip (about 3 minutes per side).
- Serve with greek yogurt for an extra boost of protein, fresh berries and a drizzle of honey, maple syrup or running nut butter!
