This incredibly easy and delicious vegan buffalo chickpea pasta bake is exactly what you need for your next dinner. It requires minimal ingredients, packs a good kick of heat and is gluten free and vegetarian! However, you could easily add meat to this dish or substitute non-dairy cheese for a vegan version. This is the perfect dish to make for a family dinner, meal prep or a game day dish!

Buffalo chicken dip holds a special place in my heart. But truly, anything with buffalo and I’m hooked. Luckily for me, everyone I cook for also loves buffalo so I made this super easy dinner for us to all enjoy. It’s a simple dinner to make after a day of work or even to prep ahead of time! As most of you know, I am all about the simple, minimal and quick dinners. When it comes to making buffalo flavored recipes, I will always love a good pre-made sauce vs. mixing hot sauce together with other flavors. I am a huge fan of the New Primal Mild Buffalo Sauce specifically, but any will obviously work for this recipe.

Does the shape or kind of the pasta matter?

The simple answer is no, BUT there is a huge preference I would say. Specifically, I would use a shorter shaped pasta as opposed to a long noodle such as spaghetti. Even more, I would use a shape that allows the mixture to fill the inside of the shape such as rigatoni, penne or ziti. As for the kind of pasta, I used chickpea pasta from the brand Banza. You could definitely use a regular pasta or brown rice pasta for this recipe but I have not tested it with any others so feel free to try it out!

SO… what will you need to make this buffalo chickpea pasta bake?

  • Buffalo Sauce
  • Chickpea Pasta
  • Plain Yogurt
  • Almond Milk
  • Garlic Powder
  • Onion Powder
  • Shredded Cheese
  • Celery
  • Kale or Spinach (optional)
  • Green Onions (optional)

Can I make any substitutions or add more ingredients?

  • Buffalo Sauce: you can use any brand or look up a homemade buffalo sauce recipe using hot sauce as the base
  • Chickpea Pasta: I have made this recipe with regular pasta and brown rice pasta but not any others
  • Plain yogurt: I am a big fan of using Greek yogurt but if making this dairy free or vegan, stick to any yogurt brand that is on the thicker side and plain (not vanilla, etc.)
  • Almond milk: Any milk will work as long as it is not flavored or sweetened
  • Shredded cheese: I would stick to either mozzarella, cheddar or a three-cheese blend. You can also add more if that is your preference! If sticking to vegan or dairy free, make sure you use a brand that melts well.
  • Celery: this is optional but adds in a veggie and pairs well with the buffalo (almost like buffalo chicken dip with celery). You can also add in shredded carrots too or in exchange.
  • Kale or spinach: again this is optional, but I love to add in an extra veggie!

Buffalo Chickpea Pasta Bake

This delicious and healthy buffalo chickpea pasta bake is an easy meal to make for a weekday dinner, meal prep or game day dish. It is gluten free, vegetarian and can be made dairy free or vegan!

Equipment

  • Baking Dish

Ingredients
  

  • 8 oz cooked chickpea pasta measured dry; see note for substitutions
  • 1 cup buffalo sauce
  • 1/2 cup almond milk
  • 3/4 cup plain yogurt greek or thick dairy free
  • 2 small stalks celery diced
  • 2 cups shredded spinach or kale optional
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • green onions to garnish

Instructions
 

  • If your pasta is not cooked, cook your pasta according to package instructions and drizzle with olive oil after draining to prevent sticking
  • Preheat oven to 350 degrees Fahrenheit
  • In a mixing bowl, add diced celery, spinach or kale if using, and pasta.
  • In a large measuring cup or bowl, mix together buffalo sauce, almond milk, plain yogurt, 1/2 cup of shredded cheese, garlic powder, onion powder, salt, and pepper.
  • Pour liquid mixture over the dry ingredient mixture and toss until each piece is evenly coated
  • Pour into an oiled 8 inch baking dish in an even layer
  • Add remaining 1/2 cup (or more if you prefer) of shredded cheese on the top
  • Bake at 350 degrees Fahrenheit at 30 minutes and optional broil at the end for a crispier cheese top
  • Serve with chopped green onions on top!

Notes

  1. pasta: I used chickpea pasta for this recipe and have used regular and brown rice pasta as well. I have not tested any others. Stick to any short pasta shape such as rigatoni, penne or ziti.
  2. For vegan or dairy free, use a non-dairy shredded cheese that melts well or skip entirelyย

BROAD ST WEEK ๐Ÿค—โšก๏ธ here are 5 things Iโ€™m doing to keep my body fresh but ready to go this week! ๐Ÿ‘‡

1. TAPER: first race and trying to figure out what that is? simply, we are lessening intensity to avoid muscle fatigue! This means yes less workouts but more so, not hitting it hard on runs or workouts. Saturday is also a great day to do a little shakeout to keep blood flow in the body and to shake nerves!
2. NUTRITION: stick with foods that are your friend this week and that you know make you feel good, especially carbs! nerves sometimes can creep up and hit your stomach, so maybe you opt for things that are less fibrous. remember: fueled bodies are STRONG bodies! 
3. HYDRATION: and no, not just the day before ๐Ÿ™‚ start now so you arenโ€™t overloading it Saturday and up all night peeing ๐Ÿ˜…
4. TEST: make sure you have tested out the clothes you are wearing, shoes youโ€™ll be running in and pre-race fuel! Iโ€™m running in new shoes so I ran in them this weekend to make sure they felt good! and lay it all out the night before - it will make you excited but also relieve some early morning wake up nerves
5. PLAN: when you go to pick up your bib, make sure you have all you need or ask questions if you are unsure on anything. have a plan for getting to the race (we all know that can be a tough one for this race specifically!) 

BONUS: the best thing someone ever told me is that sometimes nerves are actually excitement and we canโ€™t tell the difference. be excited to go out there, experience it all and have some fun โ˜บ๏ธ

Sometimes I feel like these kind of recipes arenโ€™t โ€œpost-ableโ€ until I realize half of us just truly need meals that make us feel good and can add to a weekly rotation โœŒ๏ธ

1. If you have an air fryer like mine and donโ€™t have these liners, you need them. ASAP because the clean up is so easy 
2. Mix and match your favorite veggies, nothing is set in stone. Make it your own! My personal favorite :)

dEATS ๐Ÿ‘‰ Air Fried Salmon Dinner

Base: rice in a rice cooker :)

Salmon: marinated in soy sauce, miso paste, ginger and umami seasoning (I honestly did this for 5 minutes but you can do longer if you have time. Still turns out delish). Add to the air fryer and air fry at 400 for 11-12 minutes (depending on size of fillets, these are about 4-5oz)

Veggies: 3/4 bag of Trader Joeโ€™s cruciferous crunch mix, 2 mini cucumbers, 1-2 tbsp miso paste, soy sauce, small drizzle of rice vinegar & hefty spoonful of crunchy chili oil

Topped with sesame seeds and sriracha!

Itโ€™s the answer we all hate to hear right ๐Ÿค” because at the end of the day we all have 3 big differences ๐Ÿ‘‡

1. Our body composition: between our DNA, biomarkers, height, weight, body composition, age, imbalances, strengths and weaknesses in muscles, etc
2. Goals: there are SO many different goals to have and even if you have similar goals to someone else, you may have a different starting point andโ€ฆ
3. Lifestyles: between jobs, family, friends, life situations or even how you best operate (are you an early bird or hit the gym late?)

So when your favorite influencer shares the biggest thing that made a difference in their health and it didnโ€™t work for youโ€ฆ you are not a lost cause or a failure. You quite literally are not them ๐Ÿค—

Those are just 3 but they are big ones that are important to acknowledge so that you can create healthy habits that will work for YOU

gloomy but fun 12 miles! โ˜๏ธ I swear running with someone to chat the whole time with makes it flyyyyyyy by ๐Ÿƒโ€โ™€๏ธ

Itโ€™s so fun to see growth - this run felt so good and easy which honestly shocked me! 2 years ago I decided I wanted to start running longer distances - at that point I hadnโ€™t really been running much anymore. I occasionally did classes with treads & maybe 1 or 2 runs outside a month. I signed up for the Love Run and remember being so scared to do my 8 mile long run and here we are today!! ๐Ÿคฉ 2 years but I have learned SO much since then

โญ๏ธPre-run: sourdough, PB, blueberries & honey with @bpnsupps GM1 sport (carbs + electrolytes) 
โญ๏ธDuring: 2 gels in @lskd.usa running belt (my fav)
โญ๏ธPost: protein packed smoothie to help recover the muscles

*what if* you made one small change this week and consistency hit it week to week instead of overhauling your entire lifestyle? Even the *smallest* thing counts

I get it ๐Ÿ‘‰ sometimes seeing others where you want to be can so defeating and itโ€™s overwhelming to think of ALL the things you want to change

I feel that in SO many ways too! but we stay on our own path to feel our best week to week

the answer nobody wants to actually hear is that when you see others doing something you want to do or being where you want to be, it took them time & dedication doing the same things over & over & over & over again. 

the hard truth is that 
โœ… the basics work
โŽ we donโ€™t need to change up what you are doing week to week or even every month
โœ… repetition is key 
โŽ quick fixes only lead to more frustration
โœ… starting scared is better than waiting for motivation 
โŽ you donโ€™t have to figure it out yourself or all in one day
