The easiest light & fluffy gluten free strawberry snack cake! This is the best summer dessert out there. It is made with fresh strawberries, simple ingredients and is gluten free, dairy free and refined sugar free. Make this dessert to have on hand or to bring to your next gathering!

Summer is almost here and I am ruining all of those “shredded for summer” advertisements with this DELICIOUS and easy gluten free strawberry snack cake. I am all for eating healthy, exercising and feeling confident. But the amount of diet ads to fit a bikini body is absurd. I am a firm believer that you can rock a summer body no matter what, live a healthy 80/20 lifestyle and live your best life. So with that said, I think it is time to add this summer and spring inspired dessert to your menu. It is super light and fluffy, enjoyed best cold and adds a refreshing fresh fruit element. As you all know, I try to eat as seasonally as possible so this seasonal dessert is right up my alley!

When it comes to baking gluten free, I have found that the combination of oat and almond flour is incredible. While I love the affordability of oat flour, almond flour brings a ton of moisture to the texture. Oat flour can often be more dry and not rise enough, depending on the baked good and recipe ingredients. When it comes to cakes and breads, my ideal gluten free flour blend is oat flour and almond flour.

What is a snack cake?

This is a great question! When I first saw a recipe developer use the term “snack cake” or “snacking cake” I was intrigued. What is the difference between a cake and a snack cake? Food and Wine has an excellent and thorough article on the difference between “snacking and snack cake” but I will some it up in a few sentences here.

A snack cake is typically a cake that is more simply put together. It is typically done in a sheet style (such as this one baked in an 8×8 pan), made in one bowl (we have one blender) and cut into squares (bingo). Typically, this kind of cake is lighter and easier to enjoy without needing a fork to cut through it. And if you read the whole article… you will see that you are most certainly right… there is no real answer.

How do I make gluten free strawberry snack cake?

  • Oat flour
  • Almond flour
  • Baking soda
  • Strawberries
  • Eggs
  • Plant based milk
  • Yogurt of choice
  • Maple syrup
  • Powdered or coconut sugar

How long do they last in the fridge?

Store these in a sealed container for up to 6 months in the freezer or 1 week in the refrigerator. I would suggest waiting to frost until the cake is completely cooled and right before consuming. The longer the frosting is on the cake, the more it seeps into the cake itself.

What do I make frosting with yogurt?

Yogurt frosting is seriously one of my absolute favorites! You can use Greek, regular or dairy free yogurt but I would highly recommend using a yogurt that is as thick as possible. Since we want to achieve a thick frosting texture, we want to start with a thick, creamy base. From there, I would recommend adding powdered sugar but you can use coconut or white sugar in place. After you combine these two ingredients, add 1 tablespoon of plant based milk at a time until you get a light and airy whip. You will want to use a whisk for the best consistency.

Can I make any substitutions or add more ingredients?

  • Oat flour: This flour can be substituted with regular or gluten free all purpose flour. If you are looking to add protein to this snack cake, replace up to 1/4 cup of the oat flour with protein powder of choice.
  • Almond flour: There is not direct substitute for almond flour but if you are allergic or want to replace, replace both the oat and almond flour for 1 3/4 cup regular or all purpose flour
  • Eggs: I have not tried any others but I would not suggest replacing. The combination of egg yolks and oils from the almond flour provide the fat content needed for this specific recipe. Without both, the cake will most likely be dry.
  • Maple syrup: This can be replaced with honey or liquid sugar or choice. For a sweeter cake, add up to 1/4 cup more of sugar
  • Strawberries: Any berry would work great! Just replace with 1/4 cup of your favorite fruit
  • Plant based milk: You can use a regular dairy milk as well.

Equipment

  • 8×8 or 9×9 Pan

Ingredients
  

  • 3/4 cup almond flour
  • 1 1/4 cup oat flour
  • 1 tsp baking soda
  • 2 eggs
  • 1/3 cup plant based milk
  • 1/2 cup maple syrup
  • 4 small strawberries
  • 1 tsp vanilla extract

Yogurt Frosting

  • 1 cup Greek yogurt plain or vanilla
  • 1/2 tsp vanilla extract if using plain yogurt
  • 1-3 tbsp plant based milk see notes
  • 3 tbsp powdered sugar sub coconut sugar

Topping

  • sliced strawberries

Instructions
 

  • Preheat the oven to 350°F
  • In a blender, add the almond flour, oat flour, baking soda, eggs, milk, maple syrup, strawberries and vanilla extract. Blend just until you get a smooth consistency, which should be in a few seconds
  • Pour the batter into a greased or parchment paper lined baking pan. Bake at 350°F for 18-20 minutes or until the outside is just lightly golden.
  • Allow to cool completely until frosting and adding strawberry slices to the top.
  • To make the frosting, whisk together the yogurt, milk and sugar. Add 1 tablespoon of milk at a time, until desired consistency. Should be thick so if you use a runny yogurt, you may not need much.

  1. See blog post for substitutions
  2. For the yogurt, you can use a dairy free yogurt in replace of traditional Greek yogurt
  3. For the milk amount, do 1 tablespoon at a time because it will depend on the yogurt you use.

thank you december for being the reset my mind & body needed 😌☃️🍳🎄

since starting this account, this is the longest I’ve ever not posted. this year was busy in the best way but post marathon, I felt just about zero inspiration for posting and instead of pushing to “just post”, I let myself reset and remember that it truly doesn’t matter in the grand scheme of things 

december was a month of being a lot less on socials, a lot less on my phone in general & a lot of time taking a step back to reflect on the year and be present in life

Trying to recap this entire race weekend with @everywomansmarathon & #TeamMilk thanks to @lehighvalleydairy was harder than I thought. Trying to summarize how inspiring, motivating and encouraging this event was is hard to put into words. 

From the moment I landed to the moment I left, I had a smile on my face. Women are truly incredible. Doing the hard thing full of feminine power. Finding the mental strength when the miles got tough (and I think we can all agree they absolutely did). Yet finishing with a smile because we did it. 

Time to recover & obviously what better recovery than making chocolate milk with @lehighvalleydairy milk after a flight because you know my muscles are trying to recharge 😜 Huge thank you for being the best partner!! 🫶

If you ever thought about signing up for this marathon, I could give you a million reasons why it’s a huge YES and I’d run it back tomorrow if I could!!

My motto going into this was “why not” - why not me? why not go for it? why not enjoy the hard things? why not fight when you don’t want to anymore? 

The course was SO stunning, yet more challenging than I expected so a little extra grit and perseverance was needed (a little beef with miles 16.5-20 and humidity on race day AZ 😂). I felt like my fitness was there, nutrition was on point & my strength got me up and down all the hills. Coming out of this with a huge smile, taking a moment to relish in the accomplishment, relax for a little & ready to find my next marathon 🏃‍♀️

We are officially less than 1 month out from the @everywomansmarathon which feels absolutely crazy!! 

At this point in training, my mileage is going up on peak week and then tapering down so while the mileage is important, recovery is extremely important! 

1. Nutrition: keeping up with energy needs + more is so important so that you can replenish the body that is working so hard. One of my favorite post workout meals is a smoothie featuring @lehighvalleydairy milk because it is easy on the stomach but I get extra electrolytes and protein thanks to the milk! 

2. Hydration: I’m reallyyyyy good at hydration in the first half of the day and then somewhere in the middle of the day… it isn’t always the best so my biggest goal is to keep sipping throughout the afternoon, as well as adding electrolytes because I am a super salty sweater. And bonus - did you know a glass of milk is hydrating with electrolytes?? 

3. Easy movement throughout the day: the last thing you want is to get stiff not from the running itself, but sitting in an awkward position for hours on end. It’s nice to relax but simply getting up to bring water helps a ton! 

4. Nervous system resetting: finding ways to help your nervous system settle down, like a walk with a friend, sitting in the sun or in nature, reading a book, meditation, sauna, etc. Between running a lot, lifting, working, social events, etc. - it is super important to find ways in the day to get your body to rest, that doesn’t include sleep! 

5. Sleep: I’m an 8 hour girl through and through so my goal is always a minimum of 8 and if I can, I try to get 8.5 hours!

It’s soup girl szn 🍜☔️ I don’t make the rules!!! 

for the longest time I thought I really wasn’t a soup gal when everyone else was BUT that’s because I find most soups don’t fill me up 😅 so we’re on a mission this cozy season to create ones that could act like a whole meal :)

This was is an absolute fav every cozy season 🧸

dEATS 👉 Lasagna Soup

drizzle olive oil in a pot on medium heat and add 1lb of lean beef (or preference). then add in 1 diced small onion and 6 minced cloves of garlic. let cook until beef is browned. 

add 2 tbsp tomato paste and 2 tbsp Italian seasoning, then stir.

bring temp up to high and add 24oz can of crushed tomatoes, 1 container of broth and 1 spoonful of Calabrian chili sauce (optional spice). bring to a boil, reduce to a simmer and add in 6-8oz of lasagna noodles broken into pieces (break smaller than you think lol)

cook until pasta is al dente. add 3-4 cups of spinach, handful of chopped fresh basil and 6oz of shredded mozz. stir and done in a few minutes once spinach is wilted! 

serve & option to add a dollop or two of ricotta! Enjoy :)

PUMPKIN SPICE OVERNIGHT OATS 🎃🍂 because it’s officially fall and we get to celebrate all the festive flavors of the season

Overnight oats are a go-to meal prep for me but having this flavor switch up gave me a sense of excitement for breakfast 🤩 Marathon training for @everywomansmarathon has given me some extraaaaaa early mornings to get those miles in, so having this prepped for me to eat before work is so important!

These oats are super creamy, flavorful & packed with protein + electrolytes thanks to @lehighvalleydairy milk. So go grab these ingredients, prep your breakfasts ahead of time & your future workweek self will thank you 😜

dEATS 👉 Pumpkin Spice Overnight Oats
1/2 cup rolled oats
1 scoop vanilla protein powder
1/2 cup @lehighvalleydairy milk
Spoonful chia seeds
1 spoonful of pumpkin puree (not pie filling)
3-4 tbsp Greek yogurt 
1/2 tsp pumpkin spice seasoning (just do cinnamon if you don’t have it :)

Option to add pumpkin seeds, berries or sliced figs on the top! Or festive whipped cream & extra pumpkin spice like I did 🤭

Makes 1 serving - adjust to your needs and multiple for as many servings as you need!
