Whether you are celebrating Valentine’s Day with a significant other, your favorite Gal Pals or yourself, this paleo brownie skillet for two is for you. And shamelessly, I ate this skillet myself after taking this photo so it can easily be made into a single serve dessert. I’ll let you decide!
I actually plan on doubling this recipe to bring to my friend’s house to celebrate Galentine’s Day this year. It is so simple to make and who could turn down a good brownie? Especially one with the ultimate pairing of strawberries. I swear I am the strawberry industry’s largest investor when they start to pop up again in the grocery stores during this season.
SO… what will you need to make the paleo brownie skillet for two?
- Egg
- Cacao Powder
- Almond Flour
- Coconut Oil
- Maple Syrup
- Vanilla Extract
- Baking Soda
- Dark Chocolate Chips
- Optional: Strawberry Jam (read: not optional)
What can I pair with the brownie skillet?
The flavor combinations with brownies is endless! Here are few ideas to spruce things up:
- Fresh fruit: strawberries, banana slices, pitted cherries or orange
- Creamy component: ice cream, yogurt or dairy free whipped cream
- Powdered sugar
- Nuts: chopped peanuts, walnuts, hazelnuts or pecans
Can I double this recipe?
Absolutely! Double each ingredient and add to an 8×8 pan instead
Can I make any substitutions or add more ingredients?
- Egg: I have not tested this with an egg substitute but you should be able to use a flax egg
- Coconut Oil: You can replace with applesauce, thin yogurt, vegetable oil or olive oil
- Almond flour: I cannot recommend an exact substitute but you can replace with about 1/4 cup all purpose, gluten free all-purpose or oat flour with a splash of milk
- Cocoa Powder: If you want to use cacao powder, you certainly can but the muffin will be more bitter so I would recommend a little more sweetener.
- Maple syrup: you can replace with honey or any other liquid sweetener.
- Dark Chocolate Chips: I used dairy free Enjoy Life chips but you can use any kind: dark, milk or white!
